Mince pie soft cookies

We brits love mincemeat (not minced meat). Dried fruit galore! These soft cookies are lovely if you are sick of Christmas cake and just want something to crumble over ice cream or yoghurt at the end of the night! No egg no dairy and lots of goodness!

Ingredients


  • 80g vegan butter

  • 65g light brown sugar

  • 20g granulated sugar

  • 60g mashed banana

  • 1tsp vanilla extract

  • 100g plain flour

  • 1/4tsp baking powder

  • 1/4tsp baking soda

  • pinch salt

  • 60g mixed dried fruit

Method


  • Cream the butter and sugar together until it is smooth.

  • Add in mashed banana, and vanilla extract - until all mixed evenly

  • Then add in the flour, baking powder & soda, salt

  • Fold the mixed dried fruit into the cookie batter

  • Place a tea-towel over the bowl and put in the fridge for at least 45 minutes

  • When the cookie dough is cooled, preheat the oven to 180ºc/350ºf/gas mark 6

  • Line a baking tray with paper, and scoop the dough out (I like to use an ice cream scooper).

  • You can decide what size you want - I wanted big thick cookies, but they will spread in the oven so what ever size make sure you spread them evenly

  • Bake in the oven for 10-12 minutes

  • Will be very soft so let them cool completely

I like them crunchy but as there is no egg you don’t need worry about cooking them thoroughly
