2020 Great British Bake Off - Japanese Week

This year bake off is having so much fun with new and exciting weeks. This week was Japanese inspired. It is so nice to see different cultures depicted on the television. Unfortuneatelu, a lot of Japanese food is made with sesame and nuts, but I do love inspiration. I didn't have matcha in the house - to be honest I thought I could be allergic to it, but my mum says its just powdered green tea, so I will track some down and give it a taste test - I used spinach to give it that ‘greeny’ look and it was amazing. This recipe uses egg, but I think you can substitute with banana or apple sauce (I will try that next to see, so stand by).

Ingredients


  • 80g Fresh leaf spinach

  • 1 egg

  • 25g vegan butter (or any butter)

  • 2tsp vanilla extract

  • 1tsp baking powder

  • 45g Oat flour

  • pinch of salt

  • 85g coconut milk (or any milk)

  • Greek yoghurt (or any white yoghurt)

  • Strawberries

  • Honey for drizzle

Method


  • In a blender add the spinach, egg, butter, vanilla, baking powder, oat flour, salt and lastly the milk. (In this order)

  • Blend until everything is incorporated and no spinach lumps

  • Spray a pan on medium/high heat. - needs to be hot before you add the mixture.

  • When hot, pour some of the mixture - thinly and spread around the while pan.

  • When you see bubbles on the top all over, use a spatula and flip.

  • Repeat for the whole mixutre. (should be about 4 crêpes)

  • In each crêpe, add the yoghourt on one half, the add the strawberries on top of the yoghurt and fold the other half over it.

  • Repeat for all crêpes.

  • Place on plate and drizzle with honey.
