2020 Great British Bake Off - Pastry Week
How good is pastry? Unfortuneatly, most pastry recipes take hours to make and a lot of the time they are chilling in the fridge - well if the whole world can’t chill anymore than pastries sure don’t have that right! This is a reduced recipe as I was craving cinnamon rolls but not too many. It is on theme with the fall vibes - apple and cinnamon - cozy and warm. I hope you enjoy them!

Ingredients
Pastry
85g plain flour
1/2 tsp baking powder
Pinch of salt
20g vegan butter
30ml cold water
1 tsp vanilla essence
Filling
25g vegan butter
5ml maple syrup
65g apple
1 tsp vanilla essence
2 tsp cinnamon
Method
In a mixing bowl add the flour, baking powder and salt. Mix together
Add the butter and mix with a fork - should be small crumbles
Make a well in the middle, and add the water, vanilla, and maple syrup
Mix together to form the dough
On a clean surface knead the dough around 10 times, folding along the way.
Set a side for 10 minutes
Preheat the oven to 180ºc/350ºf/gas mark 6-7 -Line pan with baking paper
To make the filling, cut up an apple and add to a frying pan.
Dry fry with the vanilla, and 1 tsp cinnamon until cooked. Let cool.
Add the butter to a bowl and mix with the maple syrup, and 1 tsp cinnamon - whip up with whisk
Roll the dough into a rectangle shape and add the butter on to the mix
Add the appled to the butter mix
Roll the dough from the longer side.
Cut up pieces, into circles.
Place on baking tray and bake for 12-15 until golden
Remove from oven, cool for 5 minutes and add date syrup or icing
