Ginger spice cookies
When it gets cold outside, I immediately crave ginger. I put it in my coffee, tea, porridge and now cookies. Ginger packs a punch but it is so amazing for this time of year, it keeps you warm spicy! This cookie recipe is a dry cookie you can add to your coffee or hot chocolate and it is dairy free!
Ingredients
100g light brown sugar
110g vegan butter
1tsp vanilla extract
1 egg
295g plain flour
pinch salt
1tsp baking powder
3tsp ground ginger
1tsp ground cinnamon
Method
Preheat oven at 350ºf/180ºc/gas mark 4
Line a baking tray with baking paper
In a mixing bowl, cream together the sugar, butter
Add in vanilla, and egg
Slowly add in the flour, baking powder, salt, ginger and cinnamon
Mix as you go
Once the mixture is formed, form into a dough with your hands
Place dough on a lightly floured surface and roll out
Keeping them quite thick - cut into the desired shapes
Place on baking trays with gaps between the cookies.
Bake for 10-12 minutes
Let them completely cool
Sprinkle with ginger and icing sugar
