Ginger spice cookies

When it gets cold outside, I immediately crave ginger. I put it in my coffee, tea, porridge and now cookies. Ginger packs a punch but it is so amazing for this time of year, it keeps you warm spicy! This cookie recipe is a dry cookie you can add to your coffee or hot chocolate and it is dairy free!

Ingredients


  • 100g light brown sugar

  • 110g vegan butter

  • 1tsp vanilla extract

  • 1 egg

  • 295g plain flour

  • pinch salt

  • 1tsp baking powder

  • 3tsp ground ginger

  • 1tsp ground cinnamon

Method


  • Preheat oven at 350ºf/180ºc/gas mark 4

  • Line a baking tray with baking paper

  • In a mixing bowl, cream together the sugar, butter

  • Add in vanilla, and egg

  • Slowly add in the flour, baking powder, salt, ginger and cinnamon

  • Mix as you go

  • Once the mixture is formed, form into a dough with your hands

  • Place dough on a lightly floured surface and roll out

  • Keeping them quite thick - cut into the desired shapes

  • Place on baking trays with gaps between the cookies.

  • Bake for 10-12 minutes

  • Let them completely cool

  • Sprinkle with ginger and icing sugar
