2020 Great British Bake Off - 80's week

I am a 90’s baby. When I think of the 80’s I think, leg warmers, great music, workout DVDs and shoulder pads; I do not think of food. It was really fun this week realising that some of my favourite dishes came out of that era. I always thought if I could go back to an era, that it would be the 80’s. Working girl, fashion, big afro hair, punk rock, “old school” the cusp of computing and apple, The Breakfast Club, Star Wars, Fame; the 80’s were classic. But enough about that - let’s get to the food.

Jam and custard finger doughnuts

Ingredients


  • 170g plain flour

  • 55g caster sugar

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 55g butter

  • 80ml milk

  • 1 egg

Toppings

  • 1/2 pack frozen strawberries

  • 30g icing sugar

  • 1/2 lemon (juice)

  • 1 tsp date syrup

Or

  • 45g chocolate

  • 5g butter

  • Sprinkles

Method


  • Preheat oven 180ºc/350ºf/gas mark 6

  • Grease doughnut moulds

  • In a mixing bowl, sift the flour, caster sugar, baking powder and salt - combine

  • In a separate bowl, melt the butter (microwave 10 sec) add in the milk

  • Add the egg to the wet (milk) ingridents and mix to combine

  • Then add to the dry (flour) ingridents and mix until everything is incorporated and no lumps (you can use a standing dough mix if you have it)

  • Place dough in the frigdge for 5/10 mins

  • Scoop dough (with spoon or piping bag) into your doughnut tray- half way up (should be around 8 doughnuts)

  • Spray or spread melted butter on top for golden look

  • Bake in the oven for 10-12 mins until golden

  • Remove and cool completely

  • Whilst waiting, add your frozen strawberries to a saucepan, and cook

  • Once they are soft, mash them all together

  • Once "jam" like, add in the icing sugar, lemon juice and date syrup

  • Sieve into a bowl. The left over (Strawberry) mixture is your jam - use the liquid part for smoothies or oats

Or

  • Melt the chocolate and butter in the microwave for 30 secs

  • Let cool for 2 mins before topping the doughnnut with them

  • Once jam/chocolate and doughnuts are cooled.

  • Spread the topping on top of the doughnut, add sprinkles and leave to cool or place in the fridge.
