Eggless (Vegan) soft pancakes
Have you ever thought, “pancakes can’t be made without eggs! Thats why they are soft and fluffy?”. Me too, but I was wrong. Great things happen in your kitchen when you don’t have a staple ingredient. That is what happened to be on a Saturday morning when I didn’t have eggs, I found my favourite recipe from that experience and I am sharing it with you!
Soft vegan pancakes
Ingredients
1 cup flour
1tsp baking powder
1/4 tsp baking soda
1/3 tsp salt
2tbsp brown sugar
1 cup vegan milk (coconut)
1tsp vanilla extract
2 tbsp soft vegan butter (light plant flora)
Spray oil for pan
Method
In a mixing bowl, combine flour, baking powder, baking soda, salt and sugar.
Pour in the milk slowly, mixing all the time until smooth.
Add the vanilla and softened butter and mix until it forms a batter.
Heat your pan and spray with the oil.
When pan is hot, add your batter (the amount is up to you - I like small so I can stack- it also depends on if you are sharing, but Lindi “doesn’t share food” (comment below if you know where thats from and we will become best friends).
When you see bubbles you can flip. Remove from pan when it is cooked. (what is good about this recipe is that you don’t need to be careful if the eggs are cooked!)
Serve with whatever toppings your want , the more, the merrier.
