Easy baked Lotus Biscoff doughnuts
I am completely biased to Lotus Biscoff and their spread. I could eat the whole pack and the tub in one sitting, and I am neither confirming nor denying that I have done just that. It is also no secret that I love donuts and if I could buy one thing when I am out, if I could, it would be donuts. So I took these favourite things of mine and combined them to make an amazing treat! Recipe from over time cook
Ingredients
1/2 cup melted lotus spread
1/3 cup sugar (brown would be best)
2/3 cup milk (don’t have to use dairy)
1/4 cup oil
2 eggs
1 tsp vanilla extract
2 tsp baking powder
1/4 tsp salt
1 3/4 cup plain flour
Glaze ingredients
1/2 cup icing sugar
2 tbsp melted lotus spread
2 tbsp milk
1 tbsp oil
lotus cookies (crushed as toppings)
Method
Preheat oven 205ºc or 400ºf and grease the donut moulds.
In a mixing bowl, whisk the spread, sugar, milk, eggs, and vanilla until smooth.
in a separate bowl, combine baking powder, salt and flour.
Add the flour mixture to the egg mixture stir until fulling combined and smooth.
Either pipe or spoon the batter in the moulds (3/4 full)
Place in the oven and bake for 10-12 minutes until they are golden and not runny in the middle.
When ready, cool. Make the glaze when the donuts are fully cooled.
GLAZE
Pour all of the ingredients in to a bowl and mix well.
Dip the tops of the donuts. into the glaze and crush the biscuits on top (immediately before setting)
Repeat for all the donuts.
