Homemade date & sunflower seed butter
Over on instagram this week I was inspired by Bubble Girl kitchen. She put a recipe of her seeded butter, which included sunflower seeds, pumpkin sees, and hemp seeds. I only had sunflower seeds in the house. If you want to see her recipe it is on her instagram along with so many amazing recipes that are free from nuts, sesame and egg! I have never been able to make creamy sun butter but with this recipe it was the creamiest it has ever been.
I used a whole bag of sun seeds but separated them in these portions to make it smooth in my blender. if you want it to be sweeter add more dates or coconut sugar.
Ingredients
1 cup raw unshelled sunflower seeds
10g dates
1tsp coconut oil
1sp salt
Method
Roast the sunflower seeds on 180ºc, until they are golden brown (mixing consistently).
Chopped the dates and place in a heatproof bowl. Add boiling water and soak for 10 minutes. Once soaked, drain and place in the blender.
Remove the sun seeds and let rest for them to cool for 10 minutes.
add the seeds, coconut oil, and salt to the blender with the dates.
Blend on high for a minute, and scraping down the sides.
Once the seeds have been broken up, blend on high until it becomes smooth (this takes me a long time because my blender keeps over heating) but it will take quite a while keep going. Add some more oil if it is still dry or clumpy.
