Quick french bread
makes 1 loaf
Ingredients
140g warm water
1 tablespoon honey or syrup (sometimes I use date syrup)
1½ teaspoons salt
7g Active Dry Yeast (one sachet)
400g plain flour
50g sunflower seeds (trader joes raw seeds are my favourite) - you can use any flavouring or seeds how ever you like your bread to taste.
Method
Mix the water, syrup, salt and yeast in a bowl. Let it rest for 5-10 mins. until there's some bubbling, foam stuff on the top. (sometimes I don't see bubbles but there is a light coat/foam on the top of the mixture)
Add in the flour slowly making sure that it is combining to the water well. (I use a spatula at this point as fingers get very sticky)
Knead until the dough doesn’t stick to your fingers just to itself and then make a loaf shape. Add in the extra ingredients i.e. sunflower seeds and knead them into the mixture.
Cover the bowl with a clean tea towel and leave it to rise for approx. 20 minutes.
Pre heat your oven to 200ºc, 400ºf, gas mark 6.
When the dough has risen, place on a baking tray, cut slits into the top and bake for approx.16-20
I cut slices and then bake them in the oven to make toast but they are lovely when eaten straight out of the oven. warm and soft in the middle!
