Red, White, and Blue Apple Pie
Happy 4th of July
I lived in America for 6 years - I came to California when I was 16. My mum and I embraced some US traditions whilst we were there and when I went to NYC at 19 I continued to celebrate some holidays. One of them was 4th of July. Summer holidays are the best- people are in great spirits, good food and sun!
An apple pie is classic for this holiday. Whilst my recipe won’t be your family’s homemade sensation it is super easy, simple, limited ingredients and most importantly, delicious!
Ingredients
170g plain flour
40g vegan butter
60ml room temperature water
1tsp baking powder
1tbsp cinnamon
Pinch salt
4 large apples
1tsp cinnamon
Strawberries (or any red fruit)
Vanilla ice cream - I chose vegan sweedish Glacee (contains soy)
Method
Preheat oven to 180ºc/350ºf/gas mark 6
Add flour and butter into a mixing bowl
Use your hands to break up the butter and combine it with the flour (small buttery lumps)
Add the baking powder, cinnamon and salt - mix.
Make a well in the dry ingredients, and add in the water slowly - you don't want to be too wet or too dry
Once you have your dough- cut it in half
Roll one half with a rolling pin in two a circle big enough for your tin- and place in the bottom of the tin
Cut slip apples- mix them with sugar and cinnamon and place on top of pastry bottom
Roll the second half of the pastry out in the same size as the bottom and place on top of apples (press sides into the tin)
Brush some vegan butter on top of the pastry and place in the oven for about 25-30 minutes, until golden on the top
Let cool for 5 minutes
Slice up the portions onto a blue plate and add some vegan vanilla ice cream and strawberries on top!
