I connected with Nicole aka Plate it safe on instagram, when she asked me why I promoted calling 999 in case of an emergency (she wanted to know why not 911?) It was such a good question. I keep forgetting that on instagram you can meet people from all over the world, and my audience isn’t just from the UK. 999 is in the UK, however, because of TV, you can use 911 universally.
Since then we have been conversing on & off about food and allergies. What I find so exciting about Nicole is that she grew up with an allergy to dairy, then developed a sesame, peanut and tree nut allergy when she was around 17 years old and an egg allergy a few years ago! She has two daughters and they were born with a peanut, tree nut and egg allergy. Why do I find this exciting? Because I was always curious about what would happen if I have children? Would they have allergies too? It is so nice to talk to someone who is going through it as well. This isn’t the end of Nicole’s story on my blog, I will have her on very soon where she can share what her life has been like living with allergies and how she helps her daughters as well.
Now on to the food. I couldn’t have a daily food diary without featuring salted caramel sauce. It is one of my favourite things to eat. I love things that mixes sweet & salty (mixed popcorn, anyone?), but salted caramel takes the cake (it goes really well on cake, FYI). I loved this recipe - it was fast, easy, simple and tastes delicious - the only things you need in a recipe. I did try it with vegan Flora butter, but unfortunately (my vegan friend explained to me) that the light Flora butter doesn’t have a high enough fat content for the caramel to work. However, he did mention that margarine works well! I used butter for the second go around and it worked like a charm. Add some vanilla & pink Himalayan salt at the end to give it that person mix - and leave to set until you serve it (it will become sticky and smooth). Click HERE for the recipe

All of Nicole’s recipes are incredible. Her food photography makes me want to bake immediately and she is advocating allergies on top of it. I am so glad she reached out to me all of those months ago. She is an inspiring woman and I can’t wait to see what recipe/adventure/ blog is coming next.
