Vegan cranberry scones
Ingredients
3 cups self raising flour
1/3 cup vegan butter
1 cup coconut milk (non-diary milk)
1 pack of dried cranberries (I used oceanspray craisins)
Icing sugar (optional)
1 lemon (optional)
Method
Preheat oven 200ºc, baking tray lined with baking paper
In a mixing bowl put flour and butter and mix until it looks like fine breadcrumbs
Make a hole in the middle of the mixture and pour the milk slowly whilst stirring.
Needs to form a dough that is not too wet or dry.
Add a bag of dried cranberry or craisins and mix well into the dough
Put the dough on a floured surface and roll so the it’s 2cm thick
Cut into the shapes you want. I like triangles and circles
Place into oven for 15-20 minutes
Squeeze lemon juice in a bowl and add in icing sugar, mixing until the consistency is thick but droopy.
Place icing on to the scones when they are completely cooled.
Enjoy warm or cold, which butter, jam, plain or any topping!
