I love putting booze into my cooking & baking, especially baileys, I am obsessed with a baileys.

Recently, I bought the baileys strawberries & cream, and I am not going to lie to you, its pretty sickly, however, I started using it in my treats and it changed the game!

I made ice cream with it, chocolate truffles and now on the 3rd day my true love gave to me…

Strawberries & cream baileys chocolate millionaire bars


Ingredients


  • 200g caster sugar

  • 1 tsp of vanilla extract

  • 160g of butter (melted)

  • 300g of plain flour

  • 100ml strawberries and cream baileys

  • 180g chocolate (melted)

  • Icing sugar

Method


  • Preheat your oven to 180ºc and line a baking tray with paper.

  • In a mixing bowl, place sugar, vanilla and melted butter mix until combined.

  • Add in the flour, mix until it forms a dough.

  • Spread mixture to the baking paper and place into the oven to bake for 9-10 minutes (until golden brown)

  • When the base is baked, take out and cool completely.

  • Once the base is cooled melt the chocolate

  • Once the chocolate is melted add in 25ml baileys stir (if it is still runny add another 25ml) it should be stiff.

  • Spread the chocolate on the base, place it in the fridge

  • Then in another bowl add the remaining 50ml bailey to a bowl and add icing sugar mixing as you it goes in to make sure it is thick but spreadable. Add more icing sugar or baileys to form this.

  • Spread the icing sugar on top of the chocolate and place back in the fridge, until it all the layers are solid.

  • Cut up and serve
