Sugar Free vegan pancakes (Sweet or Savoury)
Over the last few weeks, I have been sugar-free. I was depending on getting my sugar hit, even in the mornings. After a challenge was put to me to take something out of my life, I decided that sugar would be the thing. The first Sunday I was racking my brain on how I can make my pancakes without sugar. I was on Pinterest for an hour and realised that I would just have to experiment, and I wasn't going to use banana! My experiment was very short because I just decided that everything else would stay the same, and I was just going to take out the sugar from my normal recipe. It worked!! They weren't as fluffy, but they were still soft and easy to eat and I didn’t have that spike of sugar in the morning. Result. So I tried it the second week but made it savoury, adding in different spices and toppings, and it worked again!! I am so excited to still have pancakes in my diet without sacrificing my energy levels.
I am now eating sugar moderately in NOMO chocolate and Gnawbles but I have taken refined sugar out, at least for the foreseeable future, or until the Great British Bake Off comes on my screen again!

Ingredients
160g plain flour or oat flour
1tsp baking powder
1/4 tsp baking soda
1/3 tsp salt
160 vegan milk (coconut)
1tsp vanilla extract
Cinnamon (or any sweet spices you like)
2 tbsp (27g) soft vegan butter (light plant flora)
Spray oil for pan
Method
In a mixing bowl, combine flour, baking powder, baking soda, and salt.
Pour in the milk slowly, mixing all the time until smooth.
Add the vanilla, spices, softened butter and mix until it forms a batter.
Heat your pan and spray with the oil.
When the pan is hot, add your batter (the amount is up to you - I like small ones, make sure not to over-pour)
When you see bubbles you can flip. Remove from the pan when it is done.
Serve with whatever sweet toppings you want.
