Vegan vanilla & spice cookie (Single Serving)
As someone who bakes a lot, there are times when I just want one cookie, without having to make a whole batch of them. One cookie in the afternoon with my tea and without spiking my sugar levels. Well I thought enough is enough, I’ll just see if I can do it, and I did it. Here is a single serve vanilla & spice cookie for one. This cookie is free from : nuts, egg, dairy, refined sugar, and can be made to gluten free specifications if using gluten free oats. The spices feel autumnal and sometimes a warm cookie is all you need in the arvo.
Ingredients
10g chia (3tsbp water) - Chia ‘egg’
25g vegan butter
2tsp vanilla extract
60g oat flour
Spices
1tsp cinnamon
1/4tsp ginger
1/4tsp nutmeg
1/2 tbsp date syrup (some extra for a drizzle)
Method
Preheat oven to 180ºc/350ºF/gas mark 6 and line a baking tray with baking paper
In a small bowl mix the chia with water and set aside for it to form the ‘egg’
In a mixing bowl, add the butter and vanilla - whisk for fluffiness
Add the oat flour and spices and mix with a rubber spatula
Add in the chia ‘egg’ and date syrup - mix until everything is combined and blended.
Roll in your hands to form a bowl and place on the lined tray.
Press the cookie until it is flattened on the tray (so it gets crunchy)
Place the cookie on a higher shelf for around 12/15 minutes. (I like mine crunchy)
When finished, take out of the oven and let cool for 10 minutes.
