Pumpkin bread
This recipe is super simple to make when you want a warm soft bread in those colder months. I got the recipe from SundayRecipess. I found this recipe in a desperate moment when I needed to finish off my pumpkin puree.
Ingredients
225g pumpkin puree
2 eggs
110ml vegetable oil
200g light brown sugar
120g plain flour
1/2tsp salt
3/4tsp bicarbonate soda
1/2tsp baking powder
Method
Preheat oven 180ºc/350ºf/gas mark 4
Line a loaf tin with baking paper
In a mixing bowl, add puree, eggs, oil
In a separate bowl mix sugar, flour, salt, soda and powder
Add in the dry mixture to the wet mixture.
Beat or stir to combine fully, no lumps
Pour the mixture in to the lined tin
Bake for 45 minutes (make sure there is not mixture coming out when you put a toothpick in the middle of the loaf)
Allow to cool and add any topping you want.
Enjoy warm or cold.
