MEAL PREP: Chicken & Vegetable immune supporter
When I meal prep I put a conscious effort to give myself the right micronutrients to support my immune system. A few years ago I used to get flu’s quite regularly. I would have to spend a week in bed fighting off fevers and then have cold symptoms for up to 3 weeks. I became the girl who was always sick.
Since having an aphasic stroke in 2016, my mum and I decided that I was going to do all that I could do to be healthy. She put me on a strict vitamin plan - which I am on still - and I proceeded to cook all types of herbs, spices, vegetables and anything else that would support my immune system into my meal preps. On top of that I got regular sleep, reduced my alcohol intake (no binging on the weekends) and started focusing more on exercise (weightlifting).
I have always loved vegetables, even when I was eating a massive bowl of pasta (at 16) I cut up at least 3 different veggies in there. Fruit was always tricky has I had OAS to fresh fruit for most of my life. Now I can have fresh berries, citrus, bananas and dried fruit.
Adding a mix of colourful vegetables, and spices in to my diet has truly been incredible at reducing the my illnesses. I mostly have a cold for around 3 days (I am a nanny, what can I expect) and thats it. It doesn’t stop me from working anymore and it is rare that I am bed ridden.
I know that adding 5 vegetables to a meal prep isn’t the only thing keeping me from getting sick, but its a start (it was a start). When you think about having every meal & snack containing a micronutrient, you are better equipped to fight off the bugs. (I am not talking about corona FYI). I know that when I put these vegetables into my meal prep, I am getting at least one meal that is going to help me ward of the pesties that I am prone to.
Whenever anyone says I have a bad immune system, I say, “well actually if I am still here and healthy, then I have a GREAT immune system because it is fighting really hard for my health, and succeeding.”
