Pumpkin bread

This recipe is super simple to make when you want a warm soft bread in those colder months. I got the recipe from SundayRecipess. I found this recipe in a desperate moment when I needed to finish off my pumpkin puree.

Ingredients


  • 225g pumpkin puree

  • 2 eggs

  • 110ml vegetable oil

  • 200g light brown sugar

  • 120g plain flour

  • 1/2tsp salt

  • 3/4tsp bicarbonate soda

  • 1/2tsp baking powder

Method


  • Preheat oven 180ºc/350ºf/gas mark 4

  • Line a loaf tin with baking paper

  • In a mixing bowl, add puree, eggs, oil

  • In a separate bowl mix sugar, flour, salt, soda and powder

  • Add in the dry mixture to the wet mixture.

  • Beat or stir to combine fully, no lumps

  • Pour the mixture in to the lined tin

  • Bake for 45 minutes (make sure there is not mixture coming out when you put a toothpick in the middle of the loaf)

  • Allow to cool and add any topping you want.

  • Enjoy warm or cold.
