Easy baked Lotus Biscoff doughnuts

I am completely biased to Lotus Biscoff and their spread. I could eat the whole pack and the tub in one sitting, and I am neither confirming nor denying that I have done just that. It is also no secret that I love donuts and if I could buy one thing when I am out, if I could, it would be donuts. So I took these favourite things of mine and combined them to make an amazing treat! Recipe from over time cook

Ingredients


  • 1/2 cup melted lotus spread

  • 1/3 cup sugar (brown would be best)

  • 2/3 cup milk (don’t have to use dairy)

  • 1/4 cup oil

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1 3/4 cup plain flour


Glaze ingredients


  • 1/2 cup icing sugar

  • 2 tbsp melted lotus spread

  • 2 tbsp milk

  • 1 tbsp oil

  • lotus cookies (crushed as toppings)

Method


  • Preheat oven 205ºc or 400ºf and grease the donut moulds.

  • In a mixing bowl, whisk the spread, sugar, milk, eggs, and vanilla until smooth.

  • in a separate bowl, combine baking powder, salt and flour.

  • Add the flour mixture to the egg mixture stir until fulling combined and smooth.

  • Either pipe or spoon the batter in the moulds (3/4 full)

  • Place in the oven and bake for 10-12 minutes until they are golden and not runny in the middle.

  • When ready, cool. Make the glaze when the donuts are fully cooled.

    GLAZE

  • Pour all of the ingredients in to a bowl and mix well.

  • Dip the tops of the donuts. into the glaze and crush the biscuits on top (immediately before setting)

  • Repeat for all the donuts.
