12 DAYS OF FOODMAS: Day 5

I have always thought that scones were extremely difficult to make but this recipe is so easy that it is one that I will keep in the directory. I got the recipe from here, but I made it vegan. On the 4th day of Christmas my true love gave to me…

Vegan cranberry scones

Ingredients


  • 3 cups self raising flour

  • 1/3 cup vegan butter

  • 1 cup coconut milk (non-diary milk)

  • 1 pack of dried cranberries (I used oceanspray craisins)

  • Icing sugar (optional)

  • 1 lemon (optional)

Method


  • Preheat oven 200ºc, baking tray lined with baking paper

  • In a mixing bowl put flour and butter and mix until it looks like fine breadcrumbs

  • Make a hole in the middle of the mixture and pour the milk slowly whilst stirring.

  • Needs to form a dough that is not too wet or dry.

  • Add a bag of dried cranberry or craisins and mix well into the dough

  • Put the dough on a floured surface and roll so the it’s 2cm thick

  • Cut into the shapes you want. I like triangles and circles

  • Place into oven for 15-20 minutes

  • Squeeze lemon juice in a bowl and add in icing sugar, mixing until the consistency is thick but droopy.

  • Place icing on to the scones when they are completely cooled.

  • Enjoy warm or cold, which butter, jam, plain or any topping!
