Vegan double chocolate cookies with non - vegan salted caramel frosting

It has be at double chocolate. I am finding that I am really into vegan treats. It is quite hard to find a recipe for them that are nut free, legume free but when I do it is magical. I still haven’t quite figured out how to make a vegan salted caramel frosting that tastes like the real thing yet but when I do I will be sharing it! The cookies still tasted amazing without the frosting so you do not need it, it was just something that added to it for me!

Vegan double chocolate cookies - optional non vegan salted caramel frosting

Cookie ingredients


  • 115g softened vegan butter (I use flora)

  • 200g light brown sugar

  • 60ml non-dairy milk (I use koko unsweentend)

  • 1tsp vanilla extract

  • 160g plain flour

  • 32g cocoa powder

  • 1 tsp baking soda

  • 1 tsp baking powder

  • pinch of salt (optional)

  • 75g + dairy free chocolate chips


Method


  • Pre-heat oven to 190ºc/375ºf/gas mark 5. Line a baking tray with paper.

  • In a mixing bowl, whisk together the vegan margarine and brown sugar until combined and fluffy. Add the non-dairy milk & vanilla - mix until well combined.

  • In a separate bowl, mix together plain flour, cocoa powder, baking powder, baking soda and salt.

  • Add in half the dry ingredients to the wet, stirring to combine, then add the second half to form a dough.

  • Mix in the chocolate chips, until they are evenly spread through the dough mixture.

  • Roll 1-2 tbsp size circular balls of dough. Space evenly on your baking tray and bake in the oven for 9-10 minutes. Remove from oven and let them rest for 5 minutes before moving to a cooling rack.

  • Once on the rack, let them cool whilst you make the frosting. (if you are a vegan, please make another frosting).
