PANCAKE TUESDAY: My favourites

I love pancakes! If you follow me on instagram I regularly post my weekend pancake creations. The recipe for the pancakes is pretty much the same but the toppings are always different based on my cravings I had during the week or what I have in the house.

This recipe is for a one person but you can double up for extra people or just split the pancakes if your not that hungry. I make them in a blender for smoother consistency but you don’t have to. I put some pictures of pancakes my nanny children make with me and we just use a fork.

Ingredients


  • 1 large banana

  • 1 egg

  • 40g oats

  • 1tsp baking powder

  • 20ml milk (I use coconut) - the consistency should be thick but pourable

  • cinnamon/mixed spice for taste

  • spray oil or teaspoon of butter


Method


  • Mix all the ingredients together with a fork or blender.

  • Pour in a medium heated pan with oil or butter

  • Flip when you see bubbles or its golden brown on the edges.

  • Add any topping you want

MORNING DONUTS: Poured the batter in my donut moulds for donut pancakes! Yoghurt mixed with cocoa powder, heated frozen fruit and sprinkles!

CHRISTMAS PANCAKES: non-blended pancakes, with vanilla yoghurt, dried cranberries and cocoa libre Santa chocolate

Shredded carrots in the batter, frozen blueberries, and sunflower seed butter

Fresh strawberries, frozen fruit, Rice Krispies and maple syrup

Protein powder in the batter, yoghurt, roasted figs and sunflower seeds.

These are fake pancakes - its chocolate cake but the topping is chocolate sauce, marshmallows and whipped cream!

Single serving crepes:

1/4 cup flour, 1 egg, 1tsp baking powder, 1tbsp sugar, 1tbsp melted butter, 1/4 cup + 3tbsp milk, pinch of salt.

This was in a restaurant, I didn’t eat them but I love looking - especially at pancakes.
