Oat & Apple pie cookies

These cookies are an easy after dinner treat! Can be made gluten free and they are vegan! Quick to make and quick in the oven, you will be craving more of these after dinner lunch!

Ingredients


  • 50g brown sugar

  • 2tbsp vegan butter

  • 1 apple

  • 1tsp cinnamon

  • 1tsp vanilla extract

  • 250g oats


Method


  • Preheat oven 180ºc/350ºf/gas mark 6

  • Line a baking tray with paper

  • Cream butter and sugar in a mixing bowl

  • Shred (grate) the apple into mixing bowl

  • Add cinnamon and vanilla extract - combine

  • Add the oats

  • Mix with your hands to form a dough

  • Make small balls and press in each ball in to the baking tray

  • Bake in the oven for 12-15 minutes

  • Let cool for 5 minutes and serve
