Mexican Waffles
I love mexican food. I love guacamole, spicy chicken, soft peppers and salsa. But I also love waffles, and today I decided to mix them! Enjoy mild spicy vegan mexican waffles.
Ingredients
Waffles
1 cup gluten free oats
1/2tsp baking soda
1/2tsp turmeric
1/2tsp garlic powder
pinch of salt & pepper
1/2 avocado
2tsp vegan cream
1/2 cup vegan milk
1tsp apple cider vinegar
1/2 red chilli
1/2 green chilli
1tbsp olive oil
Sides
Small cauliflower
1tbsp olive oil
1tsp turmeric
1tsp cinnamon
2 bell peppers
1 red onion
3 garlic cloves
1tsp olive oil
1/2 cup vegan cream
Handful of fresh tomatoes
1/2 red onion
1tsp coriander
1/2 lime juice
Method
Preheat oven to Gas mark 7/200ºc or preheat waffle maker
In a mixing bowl add oats, baking soda, spices and mix
Add the avocado and stir until completely mixed
Stir in vegan cream, milk and apple cider vinegar - add in chopped chillis and olive oil
Add to a waffle maker or an in a silicon waffle pan - spray or grease them.
Bake in the oven for 25-30 minutes. in a waffle maker, split the batter and cook to specifications
Prepare the sides - chop up cauliflower, and mix with olive oil, turmeric, cinnamon and roast until the waffles are done
Slice up onion, garlic, peppers and fry with olive oil until soft
Chop the tomatoes, red onion, coriander and add to a bowl - squeeze lime juice and mix
Remove waffles and cauliflower from the oven and serve with sides
