Child friendly: Pancake Tuesdays - Banana & chocolate

makes enough for 4 children and an adult


When it comes to traditions I am the expert. I love making anything a tradition. I have a lot of traditions with my nanny kids. I have been with my nanny family for four years so the things we started doing at the beginning I kept up and added new things. It means that the kids have something to look forward too and have some sort of structure when their lives are ever changing especially in childhood.

Our favourite tradition is Pancake Tuesday. We never really have, what some people call, “pudding” after dinner meal. I think it is nice to give them something in the week that is different from a normal day.

Since I got diagnosed with not being allergic to bananas, in January this year, I really wanted to implement bananas more into their diet, to make up for the years that I said no they couldn’t eat around me.

Simple chocolate, banana & oat pancakes

Ingredients (Double the quantities for larger portions)


  • 1 banana

  • 1 egg

  • 3/4 cup oats

  • 180-100ml milk (add in slowly) (dairy free if needed)

  • 1/2tsp cinnamon

  • 1tbsp cocoa powder

  • 1/2tsp vanilla essence

  • 1tsp baking powder

  • 1tsp butter (leave extra for frying)

  • (Optional) fruit to pair the pancakes with



Method


  • Add all of the ingredients into a blender or a mixing bowl. Omitting the milk.

  • Blend/mix all the ingredients together.

  • Pour in the milk slowly to reach the desired texture (stiff but pourable)

  • Heat up a frying pan with butter or coconut oil

  • Pour the mixture to the desired circumference. (I love making small ones so the kids feel like they’ve eaten more than they have!)

  • Plate up with fresh fruit and syrup/honey/or anything your heart desires.
