2020 Great British Bake Off - Chocolate Week

Chocolate = happiness at The Allergy Table. Whilst in my life it has been very difficult to find chocolate that is safe for me to eat, I have always found something. Luckily nowadays there are lots more chocolate companies to choose from, and they are delicious.

This week I only use cocoa powder, as every chocolate bar I had, had sugar in it. If you would like to make them more chocolatey or fudgy, I would suggest putting either NOMO or Gnawbles in the batter to get a creamier, chocolatey mug cake.

Three-tiered, white chocolate “celebration cake”

Ingredients


  • 40g oat flour

  • 15g maple syrup

  • 1tsp vanilla extract

  • 5g Chia seeds + 2 tsp water

  • 5ml olive oil

  • 50ml Oatly milk

  • 35g banana

  • 5g cocoa powder

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1 tsp cinnamon

Method


  • In a small bowl, add the chia and water together- mix. Keep aside for 1 mins to let it congeal.

  • Mash the banana with a fork in a separate bowl

  • Get your large based mug and add in flour, maple syrup, vanilla and stir.

  • Once that is mixed, add in the oil, milk, mashed banana, cocoa, baking powder, soda and cinnamon- mix really well so there aren't any clumps.

  • Add in the chia mix "egg" - mix into the batter.

  • Pop the mug in the oven for 2 minutes on high

  • The top should be a little runny and the cake should be spongy.

  • If you don't like it runny, microwve for 30secs each time to reach your desired consistency.

  • Add fruit/buttercream/whipped cream/sprinkles

Add white chocolate (Milkybar) for a creamier texture - not a 3 tier cake but close enough
