2020 Great British Bake Off - Bread Week

Bread week is one of the most dreaded weeks in the tent, but one of the favourites in this house. I love bread, bread is bae, bread makes everything seem better. Butter on bread, french toast, sweet bread, cheesy bread, pull a part bread, soup in bread… the list goes on. It was lovely to see that the first challenge was soda bread - Irish soda bread.

I have been eating soda bread since I was a child but I have never made one myself; and as I am currently in Ireland, there was no time like the present. *This bread is vegan, it will taste slightly differnt to orginal soda bread but still delicious.

Ingredients


  • 1 3/4 cup coconut milk (any dairy free milk will do)

  • 1/4 cup apple cider vinegar

  • 200g wholemeal flour

  • 285g plain flour

  • 1.5tsp baking soda

  • 30g sunflower seeds (or any seed crunch)

  • 15g nutritional yeast

Method


  • Line a baking tray with baking paper

  • In a small bowl add the milk and apple cider vinegar and set aside for 10 mins (“buttermilk”)

  • In a mixing bowl mix together the flours and baking soda

  • When “buttermilk” is ready add to the flour mix (pour in bit by bit so it doesn’t become too wet)

  • Mix until is forms a dough (if too wet add more flour, if too dry add 1tsp milk at a time)

  • When the dough is formed fold in the seeds and nutritional yeast with your hands (you can knead it a bit but not too much)

  • When done place on the tray for 20mins

  • Heat oven 180c/350f/gas mark 5

  • When the dough has rested place in the preheated oven (at the low rack)

  • Set a timer for 20 mins

  • After 20mins turn up the temp 10 degrees or 2 gas marks and bake for another 10 min

  • The bread should be golden and cooked on the inside by now.

  • If it’s not golden bake a little longer, if not cooked through- turn down the temp and bake another 10/15mins

  • Once bread is done, take out of the oven and let rest for 20 mins or 10 if you want to eat it warm.

  • Place in a sealed container in the fridge for 5-7 days
