Garlic mushrooms on toast
I know, I know - I am cheating on pancakes for brunch… but sometimes you just need a savoury, garliky breakfast. Plus, making bread/toast in 5 minutes is A GAMECHANGER. This is quick breakfast, brunch, lunch, dinner, snack. Perfect for every meal!
Ingredients
1 cup gluten free flour
1/4 tsp xantham gum
1/2 tsp baking soda
1/4 cup + 1 tsp water
500g mushrooms
2 tsp vegan garlic butter
1 handful fresh spinach
Vegan butter to spread on bread
Method
In a mixing bowl, add flour, gum, and soda and mix
Slowly add in the water - should be held together (not crumbling or wet)
Once dough is formed, roll in out and cut into the toast shapes you want
Shallow fry the dough in a heated pan, flipping when one side is cooked
Cut the mushrooms into slices and fry in the same pan as you cooked the bread
Once mushrooms are cooking through, add the garlic butter and stir until they are the consistency you like to eat them
Spread the butter on to bread, add the spinach to the butter
Top with garlic mushrooms
Add salt & pepper to taste
Serve and enjoy
