Easy Lemon "YogCake"

Sometimes you just want a pudding after dinner but you don’t want to bake, or you might need a dessert for a dinner party QUICK. This is the recipe for you.

Ingredients


  • 2 cup gluten free oats

  • 1/3 brown sugar

  • 1tbsp vegan butter

  • 8 heap tbsp dairy free yoghurt (Plain or vanilla)

    A "greek style" is the best option.

  • 1 lemon

  • Handful raspberries

Method


  1. In a mixing bowl, add the oats, sugar and butter.

  2. Mix together making sure the butter is melted into the oat mix

    Set aside

  3. In another bowl, add the yoghurt and stir to make it a creamy texture

  4. Add the juice of the lemon to the yoghurt and mix together

  5. Place in the fridge

  6. Get your 4 ramekins or glass cups (not tall)

  7. Spoon the oat mix evenly into them (leaving a bit behind for the topping)

  8. Press the oat mix down to form the oat base

  9. Add the yoghurt mix evenly on to the bases.

  10. Top with raspberries and sprinkle oat mix
