ANAPHYLAXIS WEEK: Cinco de Mayo with The Nut Free Vegan

ANAPHYLAXIS AWARENESS WEEK: DAY TWO

I have spoken about Steven aka the Nut Free Vegan on instagram before (in the X-People Blog). I have dabbled with veganism and vegetarianism over the years but, unfortunately with my allergies, I found both diets very limiting, as I cannot have any of the plant protein sources available in the vegan diet (i.e. beans, chickpeas, lentils). However, I love some recipes that come from the vegan community (I do make a lot of vegan bakes) and this recipe is one of them.

What I love about the Nut Free Vegan’s recipes is that they are not limiting, plus they look delicious. He makes food that non-vegans have, but turns them vegan friendly and without nuts! They are “easy, delicious and nutritious plant-based recipes”. I find it so refreshing that someone with restrictions around diet already will chose to restrict themselves more for the love of animals and the planet. I believe that every diet is a choice and that nobody has the right to tell you what you should or shouldn’t eat (especially within in the FA community), but having lots of options and a varying diet is so crucial. I am grateful that when I go on to his website I don’t need to look out for nuts in the recipes and I feel safer already.

Basic Mexican tofu scramble (Serves 3)

A lot of people are allergic to soy, which means they cannot eat tofu, however I think you could make this recipe with just about anything. It is the spices that really make this dish come alive. I didn’t use cumin (I don’t like it) so I used paprika & ginger instead and A LOT more coriander because I love it!!

I cannot do Cinco de Mayo anymore (after I challenged avocado) without guacamole and margs! So I made a bonus recipes for you all, you can thank me later!

Homemade easy peasy guacamole (Serves 1)

Ingredients


  • 1/4 avocado

  • 1/4 red onion

  • 1 clove garlic

  • 2 chopped cherry tomatoes

  • 1/2 lime juice (squeezed)

  • 1tbsp nutritional yeast

Method


  • Mix together in a bowl. It is that simple. Pair it with one of your wraps- found HERE.


Margaritas (serves 2) - Need a blender

Ingredients


  • 3-4 cups ice

  • 3 Limes Freshly squeezed (and extra one for decoration)

  • 1/2 cup tequila (more if you like it strong)

  • 3-4tbsp simple syrup (How to make)

  • Pink Himalayan Salt to rim the glass (rub lime juice on the rim of glass and dip that in salt)

Method


  • Take the ice out of the freezer for 15-20 minutes before making the recipe - will help it to be more slushy rather than icy.

  • In a blender, add the softened ice, lime juice and blend until the ice is coarse.

  • Then add the tequila, simple syrup and blend until there is an even consistency.

  • Pour into glasses (salt or no salt).

  • Top with lime wedges or lime slices.

  • Enjoy cold!


I hope you are all enjoying Cinco de Mayo at home. Normally this is the one day of the year (one of) that I go out on the town with ma gal pal Rachel Greene and we drink all the tequila and regret our choices in the morning, but woe is me and I guess I’ll wake up tomorrow bright and early and just get on with my day. I wanted to shout my favourite vegan (the fore-mentioned) because I miss you Gare Bear!
