ANAPHYLAXIS AWARENESS WEEK: DAY ONE

It’s here Anaphylaxis awareness week, and I am so excited to be showcasing other allergy advocates in our community and making some of their delicious food for The Great Virtual Bake Off - thought of by Eimear ‘The Allergy Act’ on Instagram.

Today I am starting with one of the most popular, lovely, inspiring, kind people - Amanda (from Everyday Allergen Free on Instagram). I have followed Amanda’s work since starting my blog. She was in an early blog called the X-people where I talked about how allergy advocates & reactors are superheroes.

I bought her book pre-order because I had never seen anything like it! A cookbook called “Everyone’s Welcome. The art of living and eating Allergen Free.” It is free from peanuts, tree nuts, dairy, eggs, soy, wheat, fish, and shellfish. The book is incredible as there is so much information (things I had no idea about when it came to allergies) and it is so vibrant. I have made lots of her treats from her book and I am so excited to make her no yeast cinnamon rolls. (I think the world has been rid of yeast since lockdown so this recipe came at the perfect time - Amanda is good like that).

I want to direct you to their blogs’ this week and find some inspiration, so I won’t copy the recipes. I will tell you if I replaced or substituted anything and/or tips I have but I want this week to be about celebrating a lot of other people’s work and their dedication to Anaphylaxis/allergy awareness!

Amanda’s Rolls

The rolls are incredible. I made the apple puree from roasted apples. They are moist, cinnamon and fluffy. Warm them up for 20 secs and they are fire!!
