Eat more Allergen Free
It is Amanda’s birthday today. I wanted to give something to her only food bloggers can - A BLOG about food- not only food but her food.
I share a lot of Amanda’s food from her blog, YouTube, and that is because she has always supported me. Amanda is an OG, and she has supported me from day one. She was in one of my first blogs, ‘We are the X people’, before I even immersed myself into this community. She was supportive and we have been talking ever since. She is a shining light amongst the allergy community and social media. I bought her cookbook ‘Everyones Welcome’ on pre-order - I was that excited - and it did not disappoint. This book is the ultimate every day allergen free guide to food, but so is her blog. These recipes have been taken from her blog, cookbook, Instagram and YouTube channel - I know! How does she have the time, right?!
I wanted to share with you and her how much she means to the community (since I have been doing this she now had 10k followers on Instgram! ). I made a lot of her meals, but I made them with a twist. I made these recipes Lindi friendly (not to say they contained my allergens which they didn't because Amamnda and I have very similar lists), I just substituted for what I liked, what I had already in the kitchen and to be honest, experimenting to find my own recipe for future recipes.
I love food. If you have spent any time on my blog or Instagram you can see this. However, with my allergies, I tend to get stuck in a rut. I find something I love or a bake that I will use for weeks on end. Plus I meal prep, and the only variation in that, is that I pick one different vegetable each week to get different nutrients in my diet. I thought it might be nice if I tried out some recipes from the everyday allergen herself. This is also to show you that making substitutions happens, even if the chef has allergies and to show you how nice it is when you try something new.
It was so fun trying out new recipes and different styles of cooking. I won’t share with you the recipes, but I will share where I got them so you can find them on her platforms and follow along, if you aren’t already ( I would highly recommend you do so)!
This was incredible and very simple to make. I used doughnut peaches and mint. The syrup was delicious and I used it on my pancakes, oats and yoghurt.

- Black Cherry Chocolate Cake -
I have made this recipe 3 more times! I made it vegan, gluten free and refined sugar free. The chocolate and cherry combo is genius. Cake in the morning is what this recipe was meant for.
Pasta pesto, it is a classic. I didn’t even know what it was when I was younger, but I knew I couldn’t eat it. Now I know what it is, it is easy, but you need to get the recipe just right. Amanda as done it. I am using it on everything!

- Blueberry Scones -
I am sure you can tell that mainly what I changed was the blueberries. I swapped them for raspberries and I used oat flour and no sugar. Very soft with a delicious flavour.

- Savory Veggie burger -
I swapped the veggie burger for a turkey burger I made from the fridge, but the caramelised onions and mushrooms were a game-changer. I used some date syrup to add sweetness and a gluten free homemade bun. I admit I have made this multiple times.

- Sweet, Salty, Crunchy -
I have OAS, so I roasted my apples in the oven with some cinnamon, then topped with greek yoghurt, raisin and homemade chocolate sauce. Such a nice snack or dessert.

- Chicken Sandwich -
Tuna is the chicken of the sea right?! Avocado, tinned tuna on a gluten free homemade bun with honey. I really want to do the chicken one, though, it looks amazing!

- Oat milk Ice cream and Oat cookies -
Amanda’s recipe calls for an ice cream maker, but I just decided it would be fine. It wasn’t, so I made an oat smoothie and crumbled some salted caramel oat cookies (coming soon…) on top. It worked out very well!

- Italian-Style Roasted Peppers -
These were incredible!!! I made them for dinner with my mum and it went done a treat, we fought over who was getting the last pepper. Made with some homemade gluten free bread. Definitely a must for a dinner party!

- Strawberry Jam -
Delicious, spreadable, sweet but a tang. I would definitely double the recipe and keep in your fridge on hand, because once it runs out, it is a sad time for all.

I made this cake gluten free. The addition of blueberries created a soft texture and I added greek yoghurt into the layers to give it a creaminess. In. cred.i.ble.

- Homemade Oat milk -
Mum: “So how do you make oat milk?”
Me": “Oats. Water.”
Mum: “It’s that easy?!”
Me: “I know. Why do we keep buying Oat milk?”
Mum": “I won’t anymore.”
Me: “Okay, but make sure you buy the oats!”
I did a chocolate milk and a vanilla milk. Amanda explains it all on her YouTube video! So easy you won’t buy milk again!

- Blender Sorbet -
You know when you want ice cream but it is 7pm and you don’t want to go to the shops, plus waiting for ice cream to be ice cream is an overnight job - this is what you need. Creamy, fruity, delicious and quick! I added frozen raspberries and Kween Granola Butter on top - make double (trust me).

- Spiced spelt flour carrot cake -
Never has a cake been so on brand for me. As you can see, I love cake “let me eat cake!”. The flavours of this cake is incredible. I didn’t add sugar, I used oat flour and added raisins and sunflower seeds to the mix, but the addition of orange citrus is so inventive, my new favourite!
